Dominic’s Delights Vegan Gumbo
1 crushed clove garlic · 1 chopped onion · 1 diced green pepper · 1 c. cooked dark kidney beans · 1 c. corn kernels · 1 1/2 c. sliced okra · 2 c. diced tomatoes · 1 cup brown rice (rinsed) · 4 c. vegetable stock · 1 tsp. salt · 1/2 tsp. cayenne pepper · water for sautéing (if staying vegetarian and not vegan use a flavored oil to saute) Step 1 "Sauté" onion, green pepper and garlic in a dry nonstick pan until soft (use medium heat). Add water as necessary to prevent sticking. Step 2 Put onion mixture, tomatoes, vegetable stock, beans, corn, okra, potatoes, salt and pepper in a Crock-Pot. Step 3 Cover and cook on high for 6 hours (or on low for 8 to 10 hours). |
